I had a less technical savvy coworker putting together a raspi for something, emulation I think. And he was notoriously cheap, he told me he got a micro SD from China for a suspiciously low price.
Well during this endeavor, he would keep asking me about random errors he was seeing. And I kept saying bro it is that cheap SD card you bought. He wouldn’t hear it.
Eventually, he tried out another SD card and sure enough, no more weird errors.
If you want more confidence, run badblocks on the drives right after you get them. It will test the drive for any… bad blocks. Will take a while depending on your drive size.

Yes they are at risk. I don’t think we know yet if there will be a patch. For my iPad mini on iOS 15, I’ve turned off iMessage on it (it’s wifi only).
It seems to be a very critical flaw so I think there’s a good chance they will put out a security patch for iOS 15.
In my experience, windirstat is inferior to other similar software. It’s mostly fine but it can be very, very slow to get you results. Though honestly I don’t know if the alternatives like space sniffer or Wiztree are open source.

I put just about everything I can in docker containers, running on a VM in proxmox. However, I do run pi-hole in its own VM, for some reason it just kept stopping when in Docker, did not run very well. But I also don’t use LXC containers. It’s either docker or VMs.

Second this, proxmox on an optiplex is going to be a great place to start, although VMWare has gotten less greedy with the free version of ESXi. With how hard it is to find a raspi right now you’re going to be spending the same amount of money on an optiplex.
