The question is really, why develop something like this instead of improving something like open street map with that effort?
To be honest, the dataset In openstreetmap is great, what is missing is good search and easy apps that are on par with google or Apple.
If you buy the track on iTunes, you should be able to download it as a drm free m4a file which should work fine on your android.
/edit: although that may not be the option you are looking for.

Komoot uses openstreetmap, yes. Organic maps is a different client for openstreetmap.
Why? It has an iOS and MacOS client, I have it running on 3 iOS devices and 2 Macs.

YouTrack can be self hosted. But it may be complete overkill. It has kanban boards, a ticket system, ganz charts, everything you might want.
But you don’t need to use all of it, it can be used in parts as well.
